The pattern book (published in 1587) describes this as the goddess of grain, representing summer. This goddess is called Ceres. She represents summer because the corn is harvested then. She is holding a cornucopia or horn of plenty. This is a symbol of food and abundance, full of fruit and vegetables. Here it is holding corn (wheat or some other cereal). The original is black and white.
