Horseradish

Horseradish is the traditional sauce for roast beef. It can be very strong! I grew some horseradish in my garden and decided to try to make horseradish sauce.

Ingredients
horseradish root
water
white vinegar
salt

Process

This is a recipe for people who grow horseradish. Dig up one or more plants. You use the root.
Clean the roots and peel them. Chop into pieces. My horseradish roots were very hard!
Put into a food processor (a small one!) with a little water, white vinegar and salt. You want it cut up as fine as possible, but the roots are very hard, and even with a small food processor, it all tends to gt stuck in the corners!
Put into a jam jar and keep in the fridge until needed.

Comments

Horseradish is very pungent! It may irritate your eyes, especially once it's being pulverised. Also, it's necessary to wash everything up afterwards, very carefully. You don't want everything tasting of horseradish!

Horseradish sauce

Ingredients

3 tablespoons prepared horseradish (see above)
half a small pot of sour cream
1 teaspoon Dijon or English mustard
1 tablespoon mayonnaise

Mix them together. This is strong, so be careful!
