Roasted nuts

Roasted nuts can be expensive to buy. Sometimes they are 'healthy' and don't have enough salt. Or perhaps they have salt when you don't want it. Raw nuts can be cheaper to buy. Why not roast your own?

Cooking process
- I have tried roasting cashews and almonds. The raw nuts can be bought in health food shops, or even supermarkets. Make sure that they are cheaper than the roasted versions, or what's the point?
- Put the nuts onto a baking tray (with edges, or they'll roll off!)
- The tricky bit is selecting the oven temperature and time length. Almonds need more cooking than cashews, which burn easily. I tend to use , but if the nuts burn at this temperature, try a cooler temperature. This is experimental cooking!
- Time length varies from about 5 mins to 15 mins. The almonds above took 12 minutes. That might be a bit over-cooked for some, but that's how I like them. Cashews burn at this length of time, so less time for them.
- It's best to keep an eye on the roasting nuts, and try one from time to time. A nut straight from the oven will obviously be too hot to eat. I run it under the cold tap. OK - it makes it wet, but it cools it down! Also, you may find that the nuts near the edge of the tray cook faster (and so burn). There is a suspicion of that above. A variation is quite fun, but you can mix up the nuts once or twice during cooking (with a fork or something - they will be HOT!)
- The nuts straight from the oven seem a bit soft (and HOT!) but they seem to get more satisfactorily harder when they cool. You can put them back in the bag you bought them in, if you didn't make too much of a mess opening it. But obviously not straight from the oven, or they may melt the plastic!
Other ideas
- Despite moaning about roasted nuts being less and less salted for 'healthy' reasons, in fact, I often eat these unsalted. If you want to salt them, then add the salt when you take them from the oven.
- Please note - no added fat! So not that unhealthy even if you add salt (and most of the salt doesn't stick anyway).
- Shop-bought nuts often add spices, but that's one reason why I prefer to roast my own. But please yourself! The point is that this is very quick to do, and very easy. You don't even have to roast all the nuts in the bag at once. So you can have fun experimenting.
