Cheese straws

These cheese straws are made with flaky pastry - part of an experiment in learning how to make flaky pastry! Not entirely successful...

Ingredients
cheese (such as Cheddar)
plain flour
butter
water
lemon juice

Equipment

mixing bowl
rolling pin
baking tray

oven:
time in oven: 10 mins

preparation time:

rolling out dough 4 times

Put on the oven. It should be hot before you cook the straws!
Grate the cheese and chop it into smaller bits. Add to the plain flour. Divide the butter into three but don't add it yet.
Add enough water and a squeeze of lemon juice to make a soft, but not wet, dough.
Roll out the dough into a rectangle. Use extra flour to stop things sticking. Cut a third of the butter into small pieces and cover two thirds of the dough with them. Fold the uncovered third of the dough over part of the butter-covered dough, then the remaining third over the top.
Roll out the dough into a rectangle again, and repeat the butter covering and folding process. Do it a third time.
Roll out the dough into a rectangle one last time, and cut into strips (which are the straws).
Put in the oven, and cook until light brown.

I'm not sure if the lemon juice is necessary! But since I'd never made flaky pastry before, I thought I'd better follow the recipe.
Cheese straws are usually made (at home) with a shortcrust patry. But shop-bought ones can be flaky pastry. I wanted to learn how to do flaky pastry, and I had some cheese to use up. So I mixed the cheese straw recie and the flaky pastry recipe. They were OK. But they should be eaten immediately. By the next day, they'd stopped being crisp and started being chewy.
